He was one of those progressive men in the 1960\u2019s who enrolled in cooking classes and this became his signature dish. We grew up on it and never got used to restaurant versions or bottled dressings as a result.<\/p>\n<p>These days I\u2019ll stretch it into a full meal with some grilled chicken or shrimp, but it still makes a great side dish or salad course. Hoping that others can enjoy!<\/p>\n<p><strong>Randy&#8217;s Caesar Salad Recipe<\/strong><\/p>\n<p><strong>2 hours before serving, combine:<\/strong><br \/>\n1 garlic clove, crushed<br \/>\n1\/2 cup olive oil<\/p>\n<p><strong>Combine in large bowl:<\/strong><br \/>\n1\/2 head leaf lettuce<br \/>\n1 head of Romaine<br \/>\n1 can anchovies<br \/>\n3-4 tomatoes<\/p>\n<p><strong>Mix:<\/strong><br \/>\n<span style=\"font-size: 1.4rem\">1 egg<br \/>\n<\/span>1\/4 cup lemon juice<br \/>\n1 tsp Worcestershire sauce<br \/>\n1\/2 tsp salt and pepper<\/p>\n<p><strong>Assemble:\u00a0<\/strong><br \/>\nStrain oil over vegetables in large bowl<br \/>\nAdd 1\/2 cup of grated parmesan cheese<br \/>\nToss with dressing<br \/>\nTop with 1 cup of croutons<br \/>\nServe on cold plates<\/p>\n<p><strong>Cook&#8217;s comments: <\/strong><\/p>\n<ul>\n<li>You can substitute a little mayonnaise for the raw egg<\/li>\n<li>You can omit the salt if you use anchovies.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Recipe intro by Kurt Holfeld (Interior Design): This is the well-loved, well-used recipe card I wrote out for my father\u2019s Caesar Salad.
